TYPICAL, RELIABLE, INIMITABLE:
A PDO OLIVE OIL’S IDENTIKIT STARTS FROM ITS TERRITORY

PDO, which means Protected Designation of Origin, is a quality seal granted
by the European Union only to olive oils produced and processed in
a specific region, using traditional production methods that give
the oil its distinguishing and unique features. This means that it
is thanks to a specific geographical area if a type of olive oil is special.
Only that territory contributes to form its identity.

But what does the term “geographical area”
refer to?

A geographical area is the result of both natural factors,
such as climate, and human factors, namely
traditions, growing techniques, harvesting and olives packing
procedures. In order to obtain the PDO certification,
such physical and mechanical procedures must be
carried out in the olive oil’s area of origin.

It is for this reason that olive growers must comply with the norms
indicated by the Product Specification: it certifies producers,
undergoing strict quality controls, while at the same time
protecting consumers, who can, in this way, distinguish between
a PDO olive oil and other types of olive oil.
